The obvious: A viper launch and combat against raiders. Cool if it's team play in multiple vipers. Even cooler if players also control the raiders.
3D and/or motion simulator of the raptor in episode 12, then continue into some of episode 13 and of course some of the sheer terror from season 2 episode 1!
A "party game" with maybe 100 visitors, 12 are selected to be Cylons, some know, some are sleepers (known by nonsleeper Cylons)...

I really think an Arcade game based on the new series is more likely - that would be excellent.
However your idea is a good one yet still - a very sophistcated simulation.

What about something for the ladies? You could have Apollo Slapping (and win a cookie with extra chocolate chips if he slaps you back), Make the Vein On Tigh's Head Pop (that could be fun for both sexes), Chasing Helo (of course what the prize is, and how good it is, would depend how quickly you caught him), and I can't think of something to do with Cmdr Adama...no, I can, but I don't think I'll ever beat Xenu's "Cally Simulator."  Seriously, something like the Star Tours thing would be cool because I love simulators. It could be one of the Colonial civilian ships (to explain the number of 'passengers') that experiences FTL problems and suddenly finds itself in the middle of a firefight with just the Galactica and her Vipers trying to protect it. If they got the real actors to do voice-overs for the in-ride 'communications' it'd be great, too. |

Now, certain other activities of a more,err, romantic variety would be quite welcome... ;D As for what I'd really like...well, it's obvious: Like many others have already stated, a Viper simualtor or Raptor simulator would kick a**.
